Horiatki Salata

This literally translates to village salad. And THIS is a REAL Greek salad. FYI Greek salads do not have lettuce in them.


Ingredients:

  • 1 seedless English Cucumber, peeled and sliced

  • 4 to 5 large ripe tomatoes, sliced into wedges

  • 1 large red onion, sliced

  • 1 large green bell pepper, sliced

  • 1 cup Kalamata olives, plus more to taste

  • 1⁄4 pound brine-packed Greek Feta Cheese (drained and sliced lengthwise)

  • 1 teaspoon dried oregano

  • 2 tablespoon capers, rinsed and drained (optional)

  • 2 to 3 tablespoons freshly squeezed lemon juice (1 lemon)

  • 1/3 cup extra virgin olive oil


Instructions:

  1. Toss cucumber, tomatoes, onion, bell pepper, and olives together in a large salad bowl

  2. Top with slices of feta

  3. Crush the Oregano in hand to release its fragrant essential oils , sprinkle over salad with capers

  4. Drizzle lemon juice over salad, then olive oil

  5. Set Aside to marinate at room temp for 20 min

  6. If desired, sprinkle a pinch of salt over the tomatoes and cucumbers
