Watermelon, Cucumber and Feta Salad
This is the ultimate summertime salad! I eat a variation of this almost every morning for breakfast when I am in Greece.
Ingredients:
Salad
Half of a medium seedless watermelon, cut into 2" cubes. About 5 cups.
1/2 C. crumbled feta
1 hothouse cucumber, cut into a small dice
1/4 C. chiffonade mint
1/8 C. chiffonade Thai or opal basil
1/8 C. finally chopped and toasted pistachios
Dressing
3/4 C. whole Greek yogurt
1-2 limes/juice and zest
2-3 T. honey
1 T. lemon juice
1/4 t. ground coriander
grapeseed oil
smoked salt
pepper
Instructions:
Ingredients for Salad

*Chop and toss together in a bowl.

*Add all ingredients and whisk together.
