Watermelon, Cucumber and Feta Salad

This is the ultimate summertime salad! I eat a variation of this almost every morning for breakfast when I am in Greece.


Ingredients:

Salad

  • Half of a medium seedless watermelon, cut into 2" cubes. About 5 cups.

  • 1/2 C. crumbled feta

  • 1 hothouse cucumber, cut into a small dice

  • 1/4 C. chiffonade mint

  • 1/8 C. chiffonade Thai or opal basil

  • 1/8 C. finally chopped and toasted pistachios

Dressing

  • 3/4 C. whole Greek yogurt

  • 1-2 limes/juice and zest

  • 2-3 T. honey

  • 1 T. lemon juice

  • 1/4 t. ground coriander

  • grapeseed oil

  • smoked salt

  • pepper


Instructions:

Ingredients for Salad

*Chop and toss together in a bowl.

Ingredients for Dressing

  • 3/4 C. whole Greek yogurt

  • 1-2 limes/juice and zest

  • 2-3 T. honey

  • 1 T. lemon juice

  • 1/4 t. ground coriander

  • grapeseed oil

  • smoked salt

  • pepper

*Add all ingredients and whisk together.
